Almond Flour, Oatbran and Blueberry Pancakes

Happy New Year to everyone! I'm being very cliché this year by using the new year to start eating better. Eating clean however, never means you have to say goodbye to your favourite meals. These pancakes will prove to you that scrumptiousness is never far even without the most common ingredients for pancakes such as sugar, white flour and gallons of maple syrup. This recipe constitutes sweetness with fruit and spice alternatives such as lemon, cinnamon, blueberries and honey giving you the same satisfaction and with much greater nutritional value too.

Why cook with Oatbran and Almond Flour?

If you've never heard of Oatbran and are wondering why I'm using it here, it's because Oatbran is FULL of fibre and gives you that full feeling without having to a scoff loads of food. Almond Flour as an alternative to White Flour, is packed with Vitamin and E which are great for your immune system during this chilly season!

Ingredients:
3/4 cup of Almond Flour or Ground Almonds
3 heaped tablespoons of Oatbran
1/4 teaspoon of salt
1/2 teaspoon of baking powder
3/4 teaspoon of Cinnamon (optional)
Half a pack of blueberries chopped in half

3 Eggs
2 Tablespoons of freshly squeezed lemon juice
2 Tablespoons of honey
3 Tablespoons of milk
 

Method:

1. In one large bowl, place the first set of ingredients in and fold over so that the fruit gets covered

2.  Whisk the eggs with a fork in another bowl and then add the rest of second set of ingredients (honey, milk and lemon juice)

3. Then add the egg mix into the almond flour mixture and whisk on medium for 2 minutes.

4. Leave the mixture to rest whilst you heat a pan with a small amount of butter. 

5. Place a small amount of the batter onto the hot pan; each side should need about 20 seconds. Try and use a spatula to lift the pancake fully before flipping it over. You can decide how much you'd like the pancake to be cooked; I went for around 18 seconds on each side. 

6. You can cover your pancakes however you like. I chose a raspberry coulis which was a berry mix blitzed in a blender and then sieved to separate the seeds. You can also use maple syrup, cinnamon, icing sugar, bananas, honey, lemon etc. 
 

These are perfect for brunch ideas or just a fun breakfast ideas that you can share with someone  special. When they're done and dressed - tuck in!
